Squash casserole - A tasty squash concoction

Well here is a recipe that i came up with out of necessity. Necessity you say? Well yes. Some years ago I started to plant my own garden in my backyard and I made the decision to grow all types of fruits and vegetables in it. As it turned out, among all the different varieties of peppers, tomatoes, cucumbers, and lettuce that I grew, my top producing plants turned out to be my squash. I had grown these primarily for my father, because I had not tasted squash before. However with the sheer numbers of them I had, I had to learn to eat it, so I came up with this recipe and I have found it to be quite tasty for a vegetarian dish. I called squash casserole and I would now like to share it with you. It is very simple to make, and does not contain alot of ingredients that you will have to mess with. Here they are so get that pencil and paper ready:

1 large (or two medium) zucchini, cubed
2 tablespoons margarine
1 cup grated Swiss cCeese
1 cup Sour Cream
Parmesan Cheese
Salt
Pepper
Small amount of Cooking Oil (whatever one you use)

Now that you have your list of ingredients in front of you, let us assemble this vegetable delight:

Take the cubed squash and saute them in a small amount of cooking oil (wesson, canola, etc)

Next melt the butter

Add in the Sour Cream, Swiss Cheese, and Salt & Pepper. The Salt and Pepper does not list an amount because it is strictly up to you in terms of how much of this seasoning you want. I prefer not much salt and a little more of the pepper.

Now stir this mixture until it appears smooth

The next step is to take the squash and pour it into a casserole dish. One it is in there and spread out, cover it with the cheese mixture.

Add parmesan cheese on the top of it, to about 1/4 inch thickness.

Place the casserole in the oven at 325 and bake for 20 minutes

Pull it out and serve it to your family and watch as their eyes light up with the tasty cheese and the nice sauted squash. Enjoy!
