EASY PORK MEATBALLS

I have never really made my own meatballs successfully until the other day when I had a bright idea to use the sausage-meat from inside a package of regular sausages, mix it with breadcrumbs, herbs and seasoning and one egg and VOILA! fab meatballs that didn't fall apart!!

So ... here's how you do it. I guess you could mix/match different ground meats to achieve the same result and I will be experimenting from now on, rest assured!

INGREDIENTS to serve 4 (or 2 if you feel v hungry!)

8oz Sausagemeat/ground meat
2 slices of bread ground into crumbs + blender
1 egg lightly beaten
1 medium onion finely diced
Seasoning - about 1 tsp of salt, freshly ground pepper, Everglades seasoning (or equivalent), some dried mixed herbs (or just oregano) and garlic powder

1 lightly oiled foil-lined baking tray. If you have foil that you have used that day for bacon or meat then re-use that - it will add flavor!

METHOD

Break the sausage meat/ground mixed meats up as you drop it in to a bowl. Sprinkle over the diced onion, seasonings and breadcrumbs and stir through. Add the lightly beaten egg a little at a time - key is not to add it all at once 'cos if you end up with a sticky mixture that won't form in to balls you have to add more breadcrumbs or flour and that makes for a less tasty 'ball!

Mix all together until the mixture comes away from the side of the bowl.

Preheat oven to a medium temperature.

Put some water in a separate bowl for dipping hands (wet hands make for easier ball-rolling!). Wet hands and then with fingertips pinch of a small amount of the meatball mixture. Roll between hands lightly until a neat lil ball shape is made and then place on prepared tray. Repeat this until all the mixture is used up.

Place tray in oven and set timer to turn balls every 5 mins for a total of 30 mins - obviously if you make larger meatballs you need to allow longer time.

You can serve with spaghetti and sauce or just with salad or even as an appetiser with dips! The possibilities are endless!!
