Here is a recipe for an Italian Cake . A yummy tasting cake that is much nicer then one you will find from a box . I made this recipe for my son's birthday when he wanted something different then just a regular cake mix from a box and it was a big hit !
Ingredients
1/4 lb. soft margarine 1/2 cup shortening 2 cups sugar 5 eggs 2 cups flour 1 tsp baking soda 1 cup buttermilk 1 tsp. vanilla 1 can coconut 1 cup pecans
Cream your margarine and your shortening together. Next add your sugar and beat until smooth. Seperate you eggs from the yolks and add the egg yolks, place your egg whites aside for later. Add the yolks one at a time and beat until mixed each time. Combine flour and baking soda to your creamed mixture , alternating with buttermilk. Add your vanilla, cocunut and nuts . Beat egg white until stiff and fold gently into your yolk mixture. Pour into a greased and floured cake pan and bake on 350 for 25 to 30 minutes.
