Good evening, as you already know I am a chef that loves to study the history of all the recipes of my country.Italy.
And so today I propose you a soup of the region of the center Italy.
The region Tuscany.
The region Tuscany has an important history to cultural level, but also in the kitchen,a to eat poor, but at the same time with a refined taste.
The good one to eat Italian.
Today's recipe è:Soup of leeks.

INGREDIENTS FOR 4 PEOPLE:


29 onces leeks.
600 milliliters vegetable broth.
3 onces of pine nuts.
6 tablespoons of authentic Parmigiano cheese.
4 slices of old bread without salt.
1 tablespoon of white flour.
3 tablespoons olive oil extra virgin.

PREPARATION:


Take a saucepan and pour oil.heat and put the white part of leeks cut into slices.
Cook at low heat for 5 minutes, turning with a wooden spoon.
Now add the flour, mix well.
Pour all the broth and cook for 35 minutes,until leeks are well cooked.
Now toast slices of bread,and put on the bottom of bowls.
Pour into bowls soup leeks,the pine nuts and parmesan cheese.
Eating the soup hot.
To drink a good red wine Tuscan, "Il Chianti".


As first I said, this as the others are the authentic recipes of Italian tradition.
