Peaches are their best right now!!! So it is time for this recipe....
this makes 6 servings
Ingredients:
4 large peaches, thinly sliced
1/2 cups of sugar
2 tablespoons all-purpose flour
1 tablespoon butter
1 whole egg , beaten
ice cream, for serving
<<prepared pastry dough <unbaked> enough to line a 9 inch pie pan can be used, i dont bother making it, just but it ready done>
Preheat oven to 375 degrees. Set the unbaked pie dough onto a baking sheet lined with parchment paper.
In a bowl, gently mix peaches, flour and sugar.Pour this mixture on the center of the pastry. Remeber to leave 2 1/2 inches around the edge.
Make a rim around the fruit filling, by rolling the edge up slightly. I like to fan edges for a nice effect as i go. Place beaten egg in a dish and use a pastry brush and brush it lightly.
Place the tbsp of butter on top of the fruit filling so it can melt and cascade down.
Bake for 30-40 minutes or till the pastry turns a golden brown color. The fruit filling should be bubbling. Cool for hour on a rack a nd top with favorite ice cream,
