Advantages Tasty, Filling, Known to cure every ill ! Disadvantages Can be Greasy
...Having been brought up in a Traditional Jewish environment, I have for the past 44 years been sampling the delights of ChickenSoup every Friday evening. For the first 26 years of my life this was provided by my mother and since then by my darling wife.
There is no other taste quite like Traditional Kosher ChickenSoup. But every Jewish wife has her own unique preference for ingredients and the quantities used, each has taken elements of recipes that have been handed down through generations to form their own special formula.
My wife and my mother are no exceptions, the chickensoup they both make is excellent but both have a different taste.
A bowl of Chickensoup though would not be the same without the garnishes, permutation of which (or all) can be added.
Add-ons.

...slightly obscure recipes, for example, Jerusalem artichoke soup, seafood broth and squash and barley broth, which don't really appeal to me. I think a good old vegetable or chicken noodle souprecipe would be better placed here.
**Pasta and risotto**
Reading this section inspired me to buy a pasta maker and I have since made fresh tagliatelle, ravioli and tortellini. Each of the techniques to make these types of pasta is clearly illustrated with step by step photos. This section includes recipes for both fresh and dried pasta ranging from seafood tagliatelle to spag bol. There is also a foolproof risotto recipe and suggestions for different things to add to a risotto; myfavourite being prawns, peas, mint and basil (the mint and basil coming from my herby window box!)

For a basic Italian meal use the following recipe. Bring a large pan of water to the boil and then keep it simmering. While you are doing this fry some sliced courgettes with some mushrooms and fresh tomatoes (keep a few back for the garnish). Place on one side and gently fry the onions until opaque, add to a small amount of water and thicken with the Passata or concentrate. If you want to keep it simple just add the tomatoes, courgettes and mushrooms. Put 100gm of the pasta per person into the pan of boiling water it should be ready in about six minutes. Don't overcook it; pasta should be "al dente" which means with a bit of a bite, overcooking leads to a soggy mess.
To add a touch of style use the mince as above, sprinkle with cheese and herbs...
