HOT CHICKEN SALAD
3 Tbsp. lemon juice
1/2 cup milk
1 cup diced celery
1/4 tsp. salt
1/2 cup salted cashews
3 cups chopped, cooked chicken
1 can french fried onion rings
1/4 cup chopped olives or mushrooms (I choose olives)
1/2 cup chopped green pepper
1 cup Miracle Whip or Mayonnaise

Recipe: CHICKEN TACO SALAD DELIGHT
Ingredients:
3/4 cup bottled or fresh salsa.
3 tablespoon white wine vinegar.
1/2 teaspoon ground cumin.
1/4 teaspoon minced garlic.
1/2 pound boneless, skinless, chicken breast or thighs and cut into bite size strips.
1 cup chopped tomatoes.
1 cup canned kidney beans, rinsed and drained.
1/4 minced fresh cilantro.
1 tablespoon olive oil.
4 cups chopped iceberg or romaine lettuce.
1 cup (4 ounch)reduced ... ...a bowl. 2. Add chicken to zip-top plastic bag, pour 1/2 cup salsa mixture over chicken; seal and marinate in refrigerator 30 minutes.
3. Add tomatoes, beans, cilantro and oil to remaining salsa mixture; cover refrigerate for 30 minutes.
4. Coat a medium skillet with cooking spray and place under medium high heat until hot, add the chicken mixture; saute for 5-10 minutes until mos the the liquid has evaporated and the chicken has started to brown.

This is one I tried when I came across a recipe for it ( not sure where it was so long ago ) and decided to give it a try when I was looking for something different for us to eat one night . 1 bag salad mix ( any type you like ) I use different kinds all the time. It depends on my mood.
Cherry tomatoes, sliced in half ( my favorite) you can use any type of tomatoes if you want to, but cherry tomatoes are much neater and have better flavor for this salad.

Here is a very simple chicken salad recipe that I really enjoy! I love chicken salad. It is good year round, and is a healthy alternative over a hamburger. I have always found chicken salad very refreshing and light. I hope you try this and enjoy it.
Ingredients:
Celery (chopped up into small pieces, about 2 stalks)
1/2 cup mayonnaise Walnut pieces ( I crush these into very small pieces)
1/2 cup sour cream 1 tsp. salt 1 tsp. pepper 3 tbsp. sugar ... ...Boil chicken breasts until fully cooked, then cut up in chunks.
Mix in celery and walnuts with chicken after chicken has cooled. Add in your salt and pepper. Then add sour cream, mayo, and sugar. Mix until well blended. As an option you can add 1/2 cup of sliced up grapes. I do not care for grapes in chicken salad, but you may very well enjoy it. You can also add 1/2 cup of shredded cheddar cheese. EASY BUFFET SALAD
This salad will serve 6 people and only takes about 15 minutes to prepare. The ingredients that you will need are:-
175g or 6oz mixed lettuce.
397g or 14oz can chick peas
60g or 2 1/2 oz croutons
2 tomatoes
6 radishes
75g or 3 oz button mushrooms
1 red onion
And the ingredients for the dressing are:-
1 clove garlic crushed
2 teaspoons Dijon mustard
3 tablespoons cold chicken stock
2 tablespoons red wine vinegar
2 tablespoons olive oil
1 tablespoon lemon juice
½ teaspoon caster sugar

There's certainly less mess and a good risotto is best cooked from scratch - I've never had a 'packet' risotto taste remotely as nice as one I've made at home or had in a restaurant. I've had great results from these instructions and it's a nice confidence-builder to be able to cook something like this to such a high standard.
