Here's a fairly simple roast lemon chicken recipe - it's delicious and easy to make too!Roast Lemon Chicken with croutons Ingredients:
1 Whole chicken, cleaned
3 Lemons
Olive Oil
Thyme (fresh)
Rosemary (fresh)
Salt and Pepper to taste
1 loaf of crusty french breadPre-heat oven to 350 degrees. Slice lemons and rub entire chicken with lemon, making sure to get the juice all over the chicken. Rub with olive oil as well. Take the slices of lemons, and in a bowl, mix in the fresh herbs. Stuff the bird with sliced lemon and herbs, truss and place on a roasting pan. Bake in the oven for 45 minutes to an hour, until the skin is golden brown. Remove the stuffing and cut up chicken. For the croutons, slice the french bread into 1/2 inch cubes. In a heated pan, place bread and add some olive oil. Toast bread until they become slightly brown and crust on the outside. Serve with chicken.
