Cathy Ristagno's Chicken Scampi Recipe. (tm)

Note: If you you like your Scampi a little more "juicy" please double the ingredients.

Preparation Time: Approximately 1 hour
Serves: 4-5


What you will need: (Ingredients)
1lb Angel Hair Pasta
6-8 boneless chicken tenderloins
1 full stick of butter (not margarine)
1 can of chicken broth
3 sm cans of mushrooms (stems and pieces)
1/2 cup grated parmesan cheese
2 tbs of garlic salt
1 tbs parsley
1tsp salt
1tsp pepper

Preparation:
First in a large saucepan, empty entire contents of all 3 cans of mushrooms. Including the water.
On medium heat fry until warm and water thickens a bit.
Add butter, chicken broth, garlic salt, parsley, salt and pepper.

Allow the sauce to thicken on low/simmer heat. Slowly adding the parmesan cheese. This will add flavor and texture to the sauce so that it is not watery.

Stir often!!!

Meanwhile, dice chicken into edible sizes. And place a pot of water to boil for the Angel Hair.

Once the sauce has been allowed to thicken (after about 45 minutes, you may need longer depending on the temperature of your stove) add chicken dices to the mixture. And allow chicken to fully cook and this will also thicken the sauce a bit too. This will take about 15 minutes.

While chicken is cooking, hopefully by now your pot water should be boiling. Boil your Angel Hair Pasta. REMEMBER: ANGEL HAIR PASTA DOES NOT NEED TO BOIL LONG! I leave it in for about 30 LITERAL seconds. Then I drain completely and place the dry pasta back on the pot. If it is still a little uncooked, do not dispair!!! The best part is yet to come!!!

Your chicken should now be fully cooked.

Take your sauce while still HOT and pour the mixture over the dry angel hair that you've just boiled and drained.

Mix well ( the heat from the sauce will cook the remainder of the angel hair pasta.)

Serve with garlic bread and ENJOY!
