This is a quick and tatsy recipe for chicken cacciatora, so get your chef cap on and lets rock!!
1 ready to cook 3-5 pound frying chicken cut up
2 tablespoons olive oil
1 mediu clove of garlic< no powder this is a real recipe no cheating!!LOL>
1 teaspon Oregano, crumbled
Salt and pepper to taste
1 one pound can of stewed tomatoes 1 cup of cut up mushrooms

Brown the cut up chicken in the olive oil and the garlic, being careful not to burn either chiken or oil in pan.Before turning the chicken, sprinkle with oregano,salt and pepper.Remove the garlic. Add the mushrooms and brown lightly. Add the can of stewed tomatoes < do not drain> Cover and simmer not boil...simmer for 30 minutes. Uncover and continue to cook till sauce is reduced to desried consistancey and chicken is tender. Serve over rice, makes 4-5 servings
