One of the many dishes that make me remember hearty and savory home-cooked meals is Callos. It is a Spanish concoction that we Pinoys, (yes I am Filipino) inherited from the Spanish colonization of our country. It is a tasty stew of ox tripe and leg flavored with a wonderful mix of spices.
You will need:
800 grams to 1 kg medium sized pata (that's ox leg by the way)
1/2 kg ox tripe
olive oil
salt
ground pepper
scraps of the following: celery, ... ...onion, chopped
3/4 cup tomato sauce
1tbsp. tomato paste
1 cup chorizo bilbao
1 can vienna sausage, sliced
2 cups water
1 cube pork bouillon
2 pcs. bay leaves
11/2 cups cooked garbanzos (chickpeas that is)
1/2 cup sliced red bell pepper
1/2 cup green olives
1/2 cup grated cheese

2 cans beef broth
1 large can whole tomatoes, chopped
1 large can, spaghetti sauce ( any brand) I like Del Monte.
A bit of fresh celery chopped ( to taste)
1 small can chopped mushrooms
1/2 pound spaghetti broken in half
Salt and pepper to taste.
I would suggest thawing the frozen veggies first, then cook them halfway.
next in a large stockpot with some water, cook the onion and celery til tender. Add the meat and cook till pinkish, ... ...Add the beef broth and a bit of water to start with. Meantime cook the spaghetti til al- dente, then drain. Then add to the pot, the rest of the ingredients. You now have everything in the pot. You may need to add a little water, not to much as you don't want to lose the flavor. You can also add more sauce or beef broth. All you do is simmer and stir for about an hour or so. 1 pound cubed beef meat, 2 cups beef stock
2 tablespoons vegetable oil
1 cup dry red wine
2 cloves minced garlic
1 tablespoon chopped fresh thyme
1 bay leaf
2 cups peeled, seeded, and sliced butternut squash
1 cup peeled, sliced parsnips
1 cup peeled, chopped sweet potatoes
1 cup sliced celery
1 medium onion, thinly sliced

...must confess to serving them with a tomato sauce. There’s a final word of warning about this chapter: if you make the baklava, a syrup and nut pastry, you will get very, very sticky and you’ll do the same again when you eat it.
We head north now to Hungary. I got the feeling here of a fleeting visit, well either that or Laszlo who supplies a lot of the recipes was by far the best cook for miles around. He does a Chicken Goulash and a Beef Goulash in the soups and starters alone. The visit was made in the paprika festival in September and I suppose that it’s inevitable that it features in many of the recipes. As a side dish the green pepper and tomato stew (with paprika) is good – I’ve used it with sausages and mashed potato.
Back now to Switzerland and I really felt with this chapter that there were some original recipes...
